1. Granola

As a substitute for yogurt: Mix 1 banana and a handful of frozen raspberries or other berries with 1/2 cup of oat milk in a blender until smooth. Put the finished granola on top, refine with your choice and voilà, you have in front of you a delicious and healthy breakfast that does not contain animal products.
2. Vegan Smoked Salmon
Vegan smoked salmon is the trend par excellence and is currently offered in every hip cafe in the big city. If you want to prepare it yourself at home, you need two things in particular: carrots and smoky flavor! Well done, it tastes deceptively real. In addition, carrots are full of vitamins and minerals and are therefore good for your health. The best? With a bit of a twist, the recipe is also for you if you don’t like fish.
Preparation: It is best to use large carrots and cut them into long, thin strips with a vegetable peeler. Now cook the carrots for a few minutes until they are soft. Then add the carrot strips liquid smoke (1 teaspoon for 3 carrots), some soy sauce, lemon juice, some maple syrup and nori leaves. Just leave the latter out if you don’t want it to be so “fishy”. Then leave the smoked salmon in an airtight container in the refrigerator for at least one night.
As a basis: The vegan salmon tastes best on a bagel with cream cheese. Here, too, it is very easy to find plant-based alternatives based on soy or oats. The range in the supermarkets is constantly growing. If you want to create yourself, you can evoke a delicious dip from a piece of natural tofu, garlic and fresh herbs at will. Put everything in a blender and season with salt and pepper. Put the salmon on top and garnish with dill.
3. Vegan Whipped Eggs
Do you love delicious mixed eggs in the morning? Then try it as an alternative with the vegan variant. In this case, natural tofu is used as an egg substitute, which is ideal if you have a protein-rich diet and want to lack animal protein. So the perfect solution to replace the mixed eggs on the breakfast table.
Preparation: The secret ingredients are Turmeric – for the yellow color – and Kala Namak. The black salt gives the dish a slightly sulfurous aroma known from eggs. Simply dissolve the tofu and mix with a little fev flakes, pepper and paprika powder as needed. Then into the pan. If you prefer it a bit “lazy”, you can add soy yogurt.
Below below: Whole bread and avocado are suitable as a base here. If you like, you can roast the slice of bread on both sides with some olive oil in the pan used. 5. Vegan Tomato Mozzarella
This Mediterranean classic is part of every good brunch. But is it vegan too? In fact, yes! To make the plant-based cheese substitute, you need only 5 ingredients – namely 2 tablespoons of psyllium husks, 100 g of cashews, 4 tablespoons of female flakes and the juice of half a lemon.
Preparation: Soak the flea seeds and pieces in different containers for at least 2 hours. After that, process all the ingredients in a blender into a cheese mass and season with pepper and salt. Pour into a mozzarella bowl and place in the refrigerator overnight.
