Anyone who longs to catch a cold in the summer should eat a bowl of cold vegetable soup.

Anyone who longs to catch a cold in the summer should eat a bowl of cold vegetable soup.

You certainly didn’t cook soup so quickly – although here “cooking” is a wrong word, because this soup isn’t heated. This makes it perfect for the approaching hot days.

Ingredients for 2 servings:

  • 1 cucumber
  • 1 yellow pepper
  • 1 carrot
  • 1 stick of celery
  • 2 spring onions
  • 150 ml of tomato juice
  • 1 1/2 tablespoons olive oil
  • Salt pepper
  • 1 lime (juice)
  • Tabasco (optional)

Approximately per serving:

  • 245 calories
  • 15 grams of fat
  • 18 grams of carbohydrates
  • 5 grams of protein

And here’s how it’s done:


  1. First, remove the skin from the cucumber and cut in half lengthwise. Remove the cores. Wash and clean the peppers, peel the carrots, wash the celery and cut everything into small pieces. Now wash and chop the spring onions.
  2. Peel the vegetables and add the tomato juice and oil. Finally, refine the cold vegetable soup with salt, pepper, lime juice and – if you like – also with Tabasco. Finished!


Keep a cool head in the summer – preferably with this cold vegetable soup. It comes with all sorts of fresh vegetables and therefore provides that extra flavor. It is seasoned with lime juice to make it even brighter. And for those who like it more spicy, a shot of Tabasco warms things up – if summer isn’t hot enough for you.


And you can expect another advantage of the soup: it’s ready in just 20 minutes. Nothing is cooked here either, so you won’t sweat in the kitchen – that’s just because of the rising summer temperatures. We would say: what are you waiting for? Take the vegetables out of the fridge!
