Ingredients:
- 150 grams of red lentils
- 300 g waxy potatoes
- 250 grams of tomatoes
- 250 grams of carrots
- ½ red pepper
- 1 garlic
- 1 red onion
- 1 tablespoon butter
- 1 lemon
- 1 tp sweet pepper powder
- 700 ml vegetable stock
- 5 sprigs of parsley
- Salt pepper
For the yogurt topping:
- 200 g yogurt (10% fat)
- 1 lemon

Preparation:
Soup:
Wash, peel and quarter or cut the potatoes, carrots and tomatoes. Clean and cut the pepper. Wash the parsley, dry and chop roughly. Peel and finely chop the onion and garlic. Put the lentils in a sieve and wash the starch thoroughly under warm, running water. The water should be clear at the end.
Melt a tablespoon of butter in a saucepan, add the chopped onions and sauté briefly. Add the sliced tomatoes, sliced carrots, sliced half of the chilli and finely chopped garlic, as well as the sliced potatoes and the washed red lentils. Then season with sweet pepper powder. Pour 700 milliliters of vegetable broth over everything. Let the potato and red slow soup boil for about 20 minutes. Finally add the chopped parsley and season the soup with the juice of the second lemon and some salt and pepper and serve the soup immediately with the yogurt soak.
Yogurt top:
Squeeze the lemon and mix the juice with the Greek yogurt. Season the yogurt with salt, pepper and sweet pepper powder.
