The recipe of this vegetable soup forms a basic recipe for all other vegetable soups and can be customized according to personal taste.
Vegetable Soup – Ingredients
1 kg of seasonal vegetables
1 half leek
800 ml vegetable stock
100 ml white wine
3 tablespoons sherry
1 tablespoon sugar
Preparation – Vegetable Soup
First leeks and onions cut into small cubes and in oil sweat until they are golden yellow.
With enough sugar caramelizedeglaze with white wine and fill with vegetable broth.
Choose vegetables according to your preferences and cut into bite-sized pieces.
Add the cleaned and sliced vegetables depending on the cooking times (carrots, cauliflower etc. take longer to cook than peppers or broccoli, for example). If the vegetables are al dente, season the soup with salt, pepper and sherry taste.
If you want, you can have the soup later puree and refine with a little cream.
