Soup with a difference
Summer honeyed melon gazpacho for hot days
Have you ever tried cold soup with melon? If not, then do it today, because there is hardly any greater pleasure in summer.
And here’s how it’s done:
- Peel a squash, grate it and squeeze the juice. Wash and peel the peppers. Peel a squash, grate it and squeeze the juice. Say everything, including the bun.
- First clean the fruits and vegetables in the blender, then add the bread rolls, onion and the other ingredients and also chop. Season with salt and pepper and garnish with sprouts and basil. That was it!
Soup in summer? Hoof, isn’t that too hot? Not if it’s a cold gazpacho. We already know the classic with cucumber or tomato, but it can also be prepared with fruit. And that can still be a hearty treat, as our honeyed melon gazpacho shows. It may be sweet, but it is spiced with vinegar, citrus juice, salt and pepper and is therefore the perfect way to satisfy a small midday hunger on a hot day. If you want, you can even spice up the whole thing – for example, mix some Tabasco or a few peppers.
Of course, the honeyed melon gazpacho tastes best if you put it back in the fridge before eating and bring it to an ice temperature. At least it’s pretty hot outside! So that it doesn’t get bored, other cold soups bring enough variety to the menu. For example, there is our cold vegetable soup made from cucumber, peppers and carrots. You will definitely like our cold tomato soup with boiled egg and ham. And we also have something for dessert: a cold cherry bowl. See the gallery below for more ideas:
