Autumn is a soup season – but only cabbage soup, potato soup and lentil stew bore even the most committed eater in the long run. From time to time you need a recipe that you haven’t prepared so often – and THIS is one of them! This autumn vegetable stew with a variety of vegetables, spicy vegetables and sausages is delicious – and as mustard is added to the soup, it becomes an absolutely spicy delight. So go to the cutting board – and let’s go!

Vegetable Soup Recipe with Sausages: The mustard makes them delicious!

Admittedly, the soup needs some work, as the vegetables need to be cleaned and cut into small pieces. But: Worth it, I promise! In return, cooking almost takes care of itself – and the amount is easily enough for several days. By the way, don’t skimp on the mustard at the end: It may sound strange to put it straight into the soup, but you’ll be amazed at how delicious it is!

You will need: some vegetable oil, 1 onion, two bundles of greens, 100 grams of parsnips, 300 grams of potatoes, 1 liter of beef or vegetable stock, bay leaves, dried lovers, plenty of warm mustard, sausages for flavor, salt, pepper, nutmeg and paprika powder.

Here’s how it works: Peel the carrots, leeks and celery from the package of green vegetables and cut into small cubes. Put the parsley aside for now! Peel the parsnips and potatoes and cut into small cubes. Peel and chop the onion and fry in a little oil in a large saucepan.

Then add the vegetables (except potatoes) and fry for about five minutes. Pour the beef broth and boil. Turn down the heat, put the lid on and boil for about 10 minutes.

Delicious vegetable stew: Don’t skimp on the mustard!

Then add the potato cubes and two bay leaves and a good pinch of lovage, continue to boil until the potatoes are cooked through. Meanwhile, wash and chop the parsley. When the potatoes are done, add the parsley. Then generously add mustard to the soup and stir until dissolved.

Season with salt, pepper, nutmeg and a little paprika powder. Finally, cut the sausages into slices and let them heat in the hot soup. This matches a delicious crusty bread. Enjoy your meal!
