Cooking can be a real challenge, even with soup. What can go wrong! We’ll tell you what mistakes most people make – and how you can do better instead.

When it’s cold and uncomfortable outside, there’s nothing better than a nice, warming soup. Anyone who relies on home-cooked food has certainly once noticed that things don’t always go smoothly. Because there are quite a few Mistakes many make when making soup. We reveal more.



Soup making mistake number 1: You use too much fat when you burn the ingredients


Onions, leeks and the like are ingredients that, when cooking soup, are often sautéed before the water is poured. This provides delicious roasted aromas, but can also contribute to the soup becoming too greasy in the end. So be sure to use the grease or oil used sparingly.

And if the soup is already too greasy, the following applies: limitation of damage. You have several options for this. For example, you can fold kitchen paper and gently pull it onto the surface of the soup. The paper soaks the grease. Alternatively, you can refrigerate the soup for a few hours. The grease settles on the surface and can then be easily removed with a spoon.

Number 2: They use prepared broth cubes


Admittedly – if you don’t have that much time, prepared broth powder or broth cubes are extremely practical. However, you can’t expect a perfect taste. Of course, it is better to prepare the vegetable broth itself – pleasant with greens, water and spices. You can also cook leftover vegetables that may have been left over from the previous day’s dinner.


And if you want to save time in the future, fresh and delicious: why not pre-cook a larger amount of vegetable broth while you’re at it anyway. The broth is great for freezing – for example, portioned in an ice cube tray. So you can use the broth in the right amount the next time you cook soup.


Number 3: They boil the soup


Boil all the ingredients properly so that the flavors can develop wonderfully – you somehow inevitably get this thought when you cook soup. It is not wrong, but during boiling it can happen that the aromas of some ingredients stand out too concisely – and whiten the intended taste of the soup.


Goodies take time, even with soup. It is better to choose a medium flame and allow more time. In this way, aromas and flavors are gently cooked out of the ingredients.


Number 4: You use too much water


Too little water for too few ingredients – this can be quite annoying, especially with cream soup. At the latest when you take out the hand mixer, clean and then notice that the soup turned out to be much too mocking. With vegetable soups, you can be on the safe side first and cook flour potatoes and clean them afterwards. This makes everything nice and creamy and the soup gets a great binding.


However, if the child has already fallen into the well, a little cream or cream can ensure that the consistency changes and everything becomes more creamy. A few flakes of potato powder also do wonders, as does some cornstarch mixed with water.


Number 5: You spice it up wrong


It helps a lot – but when seasoning soup, you don’t have to reach for the spice pan and start seasoning as much as possible. First, not all spices harmonize with every ingredient. You should look in detail at the chosen recipe.


On the other hand, you quickly risk that soup becomes too salty. The ingredients of soup are spicy themselves – and the longer the soup is cooked, the more intense the taste. If you add salt too early, you can end up with overcooked soup. So it’s better if you end up cooking the soup with just a little salt and then add more spice!
