Ingredients for fish:
Dry the fish fillets and remove any bones. Season with salt and let sit until room temperature is reached. Heat vegetable oil in a heavy skillet. Grill the fish on all sides, then reduce the heat and bring to a boil. Add the butter and let it melt. Turn the fish fillets and let them soak again. Squeeze some lemon juice on top before serving.
Ingredients for beans:
Clean the beans and cook in salted water until al dente. Drain through a sieve and heat in the pan with the butter.
Ingredients for french fries:
Peel and finely chop the shallots, garlic and ginger. Wash potatoes, dry and cut into thin slices. Grind everything in vegetable oil, then defrost with water. When the water has boiled, fry the potatoes in the butter until golden brown. Salt at the end.
Ingredients for the mustard sauce:
Peel and chop the shallots, garlic and ginger and sauté in vegetable oil in a large skillet. Finely chop the pear and remove the core. Put in the pan. Glaze with port and white wine, add chilli, mustard and honey (possibly fennel honey) and season to taste. Then pour in the cream and boil. Finally taste again.
Arrange fried potatoes on plates. Put the fish fillet and beans on top. Pour the mustard sauce over and garnish to taste.
