Kohlrabi recipe and apple soup
Beautiful and creamy, super light and full of flavor – this sausage and apple soup is ideal for a quick and light summer dinner.
Ingredients for 4 servings:
- 600 grams of sausage
- 300 grams of tart apples
- 1 medium onion, cut small
- 2 tablespoons olive oil
- 1 liter vegetable broth
- 15 grams of spelled flour
- 90 grams of cream
- 40 grams of walnuts or other nuts of your choice
- salt and pepper to taste
Preparation:
- Wash the collar, cut off the leaves and separate.
- Peel the anger and cut into bite-sized pieces.
- Peel, quarter, core and chop the apples.
- Heat olive oil in a large saucepan over medium heat and sauté onions for 2-3 minutes.
- Put the collar and pumpkins in the pot and sauté for 1-2 minutes.
- Pour in the spelled flour and vegetables and bring to a boil.
- Reduce heat and cook covered for 20-25 minutes.
- Meanwhile, toast the nuts in a fat-free pan for 5 minutes until golden brown and curly.
- Whip the cream with the hand mixer until stiff.
- Finely clean the soup in a blender or with a dipping blender and season with salt and pepper.
- Garnish with cream and nuts and your sausage and apple soup is ready!

Ingredients for 4 servings:
- 4 collar
- 1 medium onion, finely chopped
- 300 grams of ground beef
- 80 grams of rice
- 1 tablespoon paprika powder
- salt and pepper
Sauce:
- 200 ml milk
- 250 grams of cream
- 20 grams of flour
- A little lemon juice
- salt and pepper
Preparation:
- Cleanse and peel the anger.
- Carefully dig with a knife.
- Prepare the rice for the filling according to the packing instructions.
- Mix the rice, ground beef and onions in a bowl and season with pepper, salt and pepper.
- Fill the colander with the mixture.
- For the sauce, heat the flour with a little oil in a large saucepan and roughen with the milk and cream, stirring constantly.
- Put the stuffed kohlrabi in the pan and cook, covered, over low heat for 30-35 minutes.

Ingredients for 3 servings:
- 350 grams of sausage
- 100 grams of almond flour
- 80 grams of parmesan, grated
- 1 egg
- salt and pepper to taste
Preparation:
- Preheat the oven to 200 degrees and cover a baking tray with parchment paper.
- Peel a squash, grate it and squeeze the juice.
- Cut into thin strips and dry with kitchen paper.
- Combine the parmesan and almond flour in a bowl and, in a separate bowl, beat the egg with salt.
- Roll the collars first into the egg and then into the bread.
- Brush with a little olive oil and place in the oven.
- Turn once after 10 minutes and bake for another 10 minutes until golden brown.

Vegan kohlrabi schnitzel recipe

Preparation:
- Peel the squash and cut into slices about 0.5 cm thick.
- Bring the water to a boil and blanch the kohlrabi for 5 minutes.
- Mix the herbs, coconut milk and water in a bowl and mix into a paste.
- Place the flour and breadcrumbs in 2 plates and roll the coleslaw first in the flour, then in the milk and finally in the breadcrumbs.
